After a year of fermentation, this lambic is pulled of the regular Oud Beersel barrels and transferred to the small 225 l whisky barrels. These barrels, originally used for aging port wine have been used in a whisky distillery before the lambic was put on these barrels. During more than a year, the lambic further matures on the small barrels while absorbing the flavor of the whisky that has penetrated the wood. Beautiful barrel flavors and a secondary fermentation in bottle have given this beer an amazing characteristic that we are quite proud of!
