The innovation by infusing lambic aims at making traditional lambic more accessible for some beer drinkers that would otherwise not discover traditional lambic. It gives us the possibility to integrate flavors of other cultures into lambic and offers wide possibilities for food pairing. Last but not least, it brings traditional lambic into the modern world, with endless possibilities and limitless tasting experiences.

ELDERFLOWER INFUSED LAMBIC

A combination of Italian culture and Belgium’s most traditional beer style, the Elderflower complements the Lambic with floral-fruity aroma’s and refreshing undertones of citrusy lemony and grass-like notes.

WITTE LAMBIEK

Lambic contains by law up to 40% of unmalted wheat, and although not considered as a wheat beer, it shares the same origin as wheat beer from the 13th century. Infused with the same spices of wheat beer, this Lambic has an orange flavour with the spicy notes of coriander in the finish.

JUNIPER INFUSED LAMBIC

Infusing Lambic with the juniper berry is an ode to the Belgian and Dutch jenever culture and the modern gin. Used mainly in northern European and particularly Scandinavian cuisine, the juniper flavor in the Lambic will be great for pairing with meat dishes, especially game meats and wild birds and with traditional winter dishes like choucroute.

PU ERH TEA INFUSED LAMBIC

Pu Erh is a fermented tea resulting in a dark red color and a powerful earthy flavor. The tea is made from one of the oldest forms of tea plants in the world. By adding the tea to the Lambic, extra character is added, although the aftertaste of this Infused Lambic is long and fruity.

GUACHAROS COFFEE INFUSED LAMBIC

In collaboration with our local coffee roaster from Halle, called “brander”, we have created the perfect match between coffee and lambic. For this infusion, we use roasted Los Guacharos coffee beans from Colombia. The complex coffee flavor of the beans adds notes of apple and caramelized chicory to the lambic.

SWEET OSMANTHUS INFUSED LAMBIC

The Osmanthus Fragrans, also known as the Sweet Osmanthus, is a shrub found mostly in Asia. It gives the beer, as its name suggests, a fantastic aroma, reminiscent of a floral bouquet from the Far East. The Lambic harmoniously blends with the fruity and floral notes of the flower.

MERKÉN INFUSED LAMBIC

Merkén is a famous Chile spice made from smoked “cacho de cabra” pepper. The peppers are dried naturally in the sun and are then smoked over a wood fire. The peppers are then mixed with roasted ground coriander seed and gently added to the Lambic.

CUBEB PEPPER INFUSED LAMBIC

Cubeb pepper, mainly growing in Java and Sumatra, starts out as the immature fruit of a tropical climbing vine and is then sundried. Infused on Lambic the Cubeb pepper adds a very aromatic almost eucalyptus flavor, with a hint of citrus and a very mild spicy character.

SALTED TANGERINE PEEL INFUSED LAMBIC

Salted Tangerine Peel is a Chinese seasoning made from sun-dried tangerine orange peel, commonly used in Chinese cuisine and herbal medicine. The salted tangerine peel gives a full body to the Lambic and the tangerine flavor is a perfect match for the citrus character of the Lambic.

SIMCOE DRY-HOPPED LAMBIC

This Lambic underwent dry-hopping with Simcoe Cryo Hops® Pellets. The cryogenic process, developed by Yakima Chief Hops, allows more aromatic components to be extracted from the hop flowers, resulting in an intense hop character, without excessive astringency or grassy aftertaste. With Simcoe hops, citrus notes predominate, along with accents of stone and tropical fruits.

PERSIMMON LEAF INFUSED LAMBIC

To create the Roasted Persimmon Leaf Tea Infused Lambic, we selected a soft one year old Lambic, which we infused with Roasted Persimmon Leaf Tea, received straight from Japan. After a maceration period of 4 weeks, the Lambic was carefully sampled and put on 3,1L BEER BOX.

The result is a fruity Lambic, with mild earthy tones, and a smooth and round mouthfeel. A perfect marriage between Belgian and Japanese traditions.

TALUS DRY-HOPPED LAMBIC

The Talus Dry-hopped Lambic is the third iteration in our series of hopped Lambics. This time, we chose to infuse our one year old Lambic with Talus Cryo Hops® from our friends at Yakima Chief Hops.

Thanks to the cryogen process, which allows for the extraction of more aromatic components from the hops, the Talus provides an intense fruity flavour, with tropical fruits taking the forefront. The bitterness is enhanced, but does not take over from the Lambic, as they both blend into one harmonious whole.

CHERRY WOOD INFUSED LAMBIC

Circular economy plays an important role at Oud Beersel. We try to waste as little as possible. That is why we came up with the idea of using the prunings of our Schaarbeek cherry trees in one of our beers.

For the Cherry Wood Infused Lambic, we chose a soft one-year-old lambic and then infused it with the prunings. After a few weeks, we tasted the result and were very pleased with it: the prunings create a wonderful aroma, with fruity notes and also hints of almond and frangipane. On the palate, this continues, followed by a long finish.

One gets the impression that cherries really were incorporated into the beer, while the colour has remained just a beautiful golden yellow. A real mindf*ck!

Newest edition in series of our dry-hopped Lambics. This time we used Nelson Sauvin, a hop from New-Zealand, named after the Sauvignon Blanc-grape, because of its fruity character.

LEMON VERBENA LEAF INFUSED LAMBIC

Lemon Verbena is a flowering plant in the verbena family, known for its lemon scent. The soft Lambic that was infused by the fragrant leaves provides the perfect backbone to make the magnificent aroma and flavour of the lemon verbena really shine through.

MATCHA TEA INFUSED LAMBIC

Matcha Lattes might be popular at the moment, but we decided to switch things up. We infused 18 months old Lambic with finely ground Matcha powder and let it steep for about two weeks. The result is very fragrant with obvious green tea notes, but also fruitier tones, reminiscent of ripe peach. Perfect for all occasions!

VIOLET FLOWER INFUSED LAMBIC

The viola tricolor is a European flower that has been used as a medicinal plant since the Middle Ages. The taste is mild, but pairs perfectly with our 18 months old Lambic. You will get some green and woody notes, but the violet flower also imparts an almost sweet and floral character. A great discovery!

MOTUEKA DRY-HOPPED LAMBIC

Lambic infused with a New Zealand hop variety. Motueka hops are used in a wide range of styles, so why not use it in a Lambic? We dry-hopped our 18 months old Lambic with Motueka for 2 weeks, so the citrus character really shines through. The soft bitterness pairs well with the inherent grapefruit notes of the Lambic. A nice thirst-quencher!
