OUDE LAMBIEK OUD BEERSEL

The Lambic beer of Oud Beersel is a unique beer that enjoys great fame all over the world.

The beer is only brewed during the colder months of the year and ferments spontaneously in a natural way thanks to the specific microflora and continues maturing in wooden barrels for up to 3 years.

Lambic beer is the oldest still existing beer style in Belgium and goes back to even before 1300 AD. Until approximately 1860 Lambic beer was actually one of the only beers that was brewed in the region of Brussels, the Valley of the Senne and the Pajottenland.

Spontaneous fermentation comprises various fermentation phases which results in the complex and surprising character of the beer. The lactic fermentation results in a slightly sour beer. The wild yeasts, called Brettanomyces, provide the typical Lambic aroma. Furthermore, the Lambic of Oud Beersel is blessed with fruity flavours of green apples and pink grapefruit. Due to the maturation in wooden barrels this Lambic contains practically no carbon dioxide anymore.

This yellow blond nectar is both thirst-quenching and complex in taste and harmonizes perfectly with fish, game, white meat and cheese.

OUDE LAMBIEK OUD BEERSEL

This standard edition of Oude Lambiek Oud Beersel has aged at least one year on wooden barrels. After one year, Lambic can be called Oude Lambiek as the main fermentation of the beer is accomplished. Indeed, it takes one year for Lambic to ferment on wooden barrels. In general, the Lambic is selected from one barrel, but sometimes is is a blend of two or more Lambics. OUDE LAMBIEK OUD BEERSEL - 2 YEARS

Lambic from Oud Beersel that has been allowed to mature on barrels at the blendery for two years. After about a year, the Lambic is as good as fermented out and is therefore called Oude Lambic. However, the Brettanomyces remain active and further break down the complex sugar chains. The fruitiness decreases slightly and gives way to the typical, funky ‘Brett’ character, often associated with leather, tobacco or barnyard. The 2-year-old Lambic is the perfect for those who like deeper, complex flavours accompanied by a pleasant, fresh sourness.

After one full year of fermentation on wooden barrels, this Lambic matures further on wooden barrels for another 2 years. The majority of this Lambic is used for the production of Oude Geuze and Oude Kriek, that require by the EU protection Lambic that aged 3 years on wooden barrels. But sometimes, part of this Lambic is packaged separately to give our customers better insight into wooden barrel aging of Lambic.
