Innovation and tradition go hand in hand at Oud Beersel. Traditional Lambic is infused with surprising ingredients and then bottled at the blendery itself. Thanks to secondary fermentation in the bottle, the result is pleasantly sparkling and extremely tasty. Below you can find an overview of the versions we have made so far – some of which are already sold out – but there is more to come.

SALTED TANGERINE PEEL LAMBIEK - SPARKLING INFUSED

Salted Tangerine Peel, also known as Chen Pi, is a Chinese seasoning made from sun-dried tangerine peel, commonly used in chinese cuisine and herbal medicine. The salted peel gives a full body to the Lambic, further accentuated by the refermentation in the bottle. In turn, the tangerine flavour perfectly matches the citrus character of the Lambic.

GRAPEFRUIT PEEL LAMBIEK - SPARKLING INFUSED

The fruity bitterness of grapefruit is a flavour often found in Lambic, and thanks to this infusion, that flavour is highlighted. After four weeks of the peel macerating on eighteen-months-old Lambic, the result was bottled. The re-fermentation in the bottle gives the beer a pleasant and round mouthfeel, which contrasts perfectly with its bitter-sour character.

ROSE FLOWER LAMBIEK - SPARKLING INFUSED

For the production of the Rose Flower Lambiek – Sparkling Infused, we added rose petals to a a soft, foeder-aged Lambic and left them to macerate for about 4 weeks. After that, we bottled the beer so a secondary fermentation could take place. The result is a slightly pink Lambic, with bright floral notes and a sparkling mouthfeel.

ORANGE BLOSSOM LAMBIEK - SPARKLING INFUSED

For the Orange Blossom Lambiek, a one-year-old Lambic was infused with orange blossom for several weeks. This gives the Lambic a deliciously fresh flavour, with fruity citrus notes and bitter-sweet accents. Afterwards, the Lambic is refermented on bottle, which provides a pleasant carbonation and a beautiful harmony of flavours.

WITTE LAMBIEK - SPARKLING INFUSED

Oud Beersel’s Witte Lambiek takes its inspiration from traditional Belgian wheat beers: these are characterised by the addition of coriander seeds and bitter orange peel. The same thing was done here: both ingredients were macerated on one-year-old lambic for several weeks to obtain that typical, citrusy flavour, which is further highlighted thanks to the acidity of the lambic. The spiciness of the coriander is present in the aftertaste, but does not dominate. Thanks to the refermentation in the bottle, the result is a beautiful beer with traditional flavours, yet just that little bit different.

ROASTED OOLONG TEA LAMBIEK - SPARKLING INFUSED

To create the Roasted Oolong Tea Lambiek, one-year-old Lambic was infused with roasted Oolong tea for about four weeks. This tea, especially popular in Asia, is slightly oxidised and was then roasted in the traditional way. This results in a rich flavour, with a certain spiciness and some toasted notes. Thanks to the re-fermentation in the bottle, these flavours blend into one harmonious whole.

WINTERLAMBIEK - SPARKLING INFUSED

lmagine the Christmas atmosphere and think of the green and spicy scent of pine trees, the aromas in the sauna and the winter fun. “Winterlambiek – Sparkling Infused” is infused with pine buds. The incredible aroma takes you to the evergreen trees of the pine forest. The earthy pine buds give a spicy flavor to the smooth and complex Lambic, which offers a mild, slightly dry finish that will have you looking for the next sip as soon as possible!

“Winterlambiek – Sparkling Infused” is also very unique because it does not follow the traditional path of a winter beer. lt drinks like a light beer, has a refreshing carbonation and focuses more on the complexity of Lambic to drive the flavour forward instead of the sweetness that typically prevails in a winter beer.

RED SZECHUAN PEPPER LAMBIEK - SPARKLING INFUSED

Although its name suggests otherwise, the szechuan pepper is not a real pepper, but a distant cousin of the citrus fruit. For this beer, the red version was used, which has a slightly fruitier flavour than the green and provides a slight tingling effect on the aftertaste.

Other than that, citrus aromas and a certain spiciness emerge. The refermentation in the bottle provides the necessary minerality and balance, so the presence of the szechuan pepper is not overwhelming.

LAPSANG SOUCHONG LAMBIEK - SPARKLING INFUSED

Oud Beersel’s Lapsang Souchong Lambiek is an infused Lambic, which is then re-fermented in the bottle. For this version, Lapsang Souchong was used: this is a smoked black tea, which gives the beer a complex, round flavour, with a peaty touch at the end, which can also be found in certain peated whiskies. The refermentation in the bottle gives it a pleasant carbonation. In short, a beer for lovers of the better heavy stuff.
