WILD DRY CIDERS

Since 2022, Oud Beersel has been working with Vitalii Karvyha, the former Berryland cider maker from Ukraine, who had to flee the war. They put their skills together to produce cider on the wooden barrels at Oud Beersel. The proceeds from the sale of the cider should enable Vitalii to start up an activity again.

WILD DRY CIDER - BLENDED WITH LAMBIC

This cider is blended with 20% of Lambic.

The cider is produced from McIntosh, Cortland and wild apples picked from an orchard more than 50 years old. The macerated apple juice is naturally fermented and bottled at Oud Beersel without pasteurisation or the addition of sulphites. This results in a wild dry cider, with almost no residual sugar.

Ingredients: fermented apple juice, 20% Lambic (contains barley & wheat)
7.5% ABV
Colour: pale yellow
Serve at: 8°C – 12°C
Shelf life: 10 years with subtle taste evolution
Bottle content: 75 cl

WILD DRY CIDER - SCHAARBEEKSE CHERRIES

Matured on Schaarbeekse cherries that macerated previously on Lambic.

The cider is produced from McIntosh, Cortland and wild apples picked from an orchard more than 50 years old. The macerated apple juice is naturally fermented and bottled at Oud Beersel without pasteurisation or the addition of sulphites. This results in a wild dry cider, with almost no residual sugar.

7.5% ABV
Colour: pale red
Serve at: 8°C – 12°C
Shelf life: 10 years with subtle taste evolution
Bottle content: 75 cl

WILD DRY CIDER – AGED ON LAMBIC WHISKY BARRELS

Matured in Port wood Whisky barrels that were previously used for Lambic.

Matured on Hungarian Furmint & Hárslevelű grapes that macerated previously on Lambic.

WILD DRY CIDER – AGED ON LAMBIC BARRELS

Produced from Lobo, Noris and McIntosh apples picked from an orchard more than 50 years old. Naturally fermented at Oud Beersel and matured on barrels that were previously used for Lambic.

WILD DRY CIDER – BARBERA GRAPES

Cider matured on Italian Barbera grapes that previously macerated on Lambic. Instead of throwing the used grapes away, we decided to reuse them to infuse our regular cider with some extra colour and flavour. It provides some extra vinous depth for the cider, along with some tannic notes.
